Marlee's Carnival Shrimp
8 shrimp
1/4 teaspoon of ginger
1 cup mushrooms
1/4 cup scallions
1/4 cup diced red pepper
1 tablespoon shredded coconut
1/2 can coconut milk
1/2 lime
1 1/2 cup cooked rice
salt and pepper to taste
Start by adding a little butter to your hot pain on medium to high heat. Add shrimp and saute for 1.5 minutes. Add ginger, mushrooms, scallions, red pepper, and shredded coconut. Squeeze in 1/4 lime and add salt and pepper. Add 1/2 can of coconut milk. Simmer for about 3 minutes. Remove from heat. Serve over bed of rice. Finish by squeezing lime over and sprinkling with toasted coconut.
