Chicken Cacciatore

4 oz bacon (diced)
1/2 cup red,green,and yellow bell peppers(large diced)
1/2 cup yellow onion(large diced)
6 mushrooms(quartered)
1 Tablespoon minced garlic
1 cup canned diced tomatoes
1 teaspoon dried oregano
2 teaspoons dried basil
1/2 teaspoon black pepper
1 tablespoon balsamic vinegar
1/2 cup red wine
1 teaspoon chicken base
1/2 tablespoon brown sugar
2- 6oz chicken breasts
1/2 cup seasoned flour
2 tablespoons butter/oil mixture

Place butter/oil mixture in a saute pan on medium/high heat. Dredge chicken breasts in seasoned flour until fully coated. Shake off excess flour and place in pan. Cook chicken about 1/2 of the way or until flour is cooked and lightly browned. Place chicken in refrigerator for later. In another pan render bacon until crispy. Add mushrooms and saute for 3 minutes. Add garlic, peppers and onions and saute for 3 more minutes. Next, add diced tomatoes,oregano,basil, pepper, balsamic,red wine,chicken base, and brown sugar. Let simmer for about 20 minutes. Place chicken in baking dish and coat liberally with sauce. cover and bake at 350 degrees for 45-60 minutes or until internal temperature of chicken is 165 degrees. uncover and enjoy!
