KBJR 6 and Range 11 Today Cooking: Big Fish Golf Club

Spaetzle as prepared by Big Fish Golf Club.


8 oz flour sifted
2 eggs
½ teaspoon salt
8 tablespoons water or milk
Large pot of salted water
Dash of nutmeg


Place sifted flour into bowl making a well in center
Add eggs, salt and water into well
Mix well with wooden spoon or hand mixer
Beat dough until it forms bubbles
Put dough into grater or press
Press dough into a pot of boiling hot, salted water
Simmer until the spaetzle floats to the top
Place spaetzle into colander and rinse with cold water
Let sit about 10 minutes until dry
Toss spaetzle in melted butter in fry pan
Season with a little salt, touch of nutmeg
Simmer until hot-will be lightly browned

Serves 4-6 people
