1 egg
3/4 cup sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup all-purpose flour
1/2 cup chopped pecans or walnuts
2 small, tart apples, diced
Whipped cream or cinnamon ice cream for serving
Preheat oven to 350F. Generously butter a 9-inch pie pan. In a large bowl, mix together all of the ingredients except for the whipped cream or ice cream. Stir until dry ingredients are no longer visible. Mixture will be stiff. Spoon into the prepared pie pan. Bake 30 minutes or until browned and slightly puffed. To serve, cut hot pie into wedges; top with dollops of whipped cream or ice cream.
