The Rambler Wild Rice Sandwich

The Rambler Food Truck
Wild Rice Sandwich
Ingredients:
2 cups wild rice
2 eggs
1/2 c. Onions
Any other vegetables or spices you might want to try (chives, carrots, peppers)
Mix all ingredients well. Use ice cream scooper to scoop onto greased pan. Brown each side.
Top with whatever you would like, here are some ideas:
Fried egg with sauteed spinach
or
Sprouts, hummus, and sauteed yellow squash with onion
