2 cans cannellini beans (white kidney beans)
2 tsp. garlic, minced
4 Tbsp. lemon juice
1/2 c. fresh parsley
3/4 c. extra virgin olive oil
1/2 tsp. salt
1/2 c. kalamata olives (if desired.)
Put all ingredients in a food processor and pulse until it is pureed. As desired, you can add kalamata olives, artichoke, bell pepper, tomato, etc. for different flavors.
Serve with fresh veggies, and warm pita bread.
