Wild Cranberry Pecan Chicken Salad

Lettuce - any type
Mandarin oranges - 4oz
Dried cranberries - 4oz
Chicken breast - cooked and seasoned
Candied pecans - 4oz
Raspberry vinaigrette dressing

Put lettuce in bowl. Top with oranges, cranberries, chicken, pecans, and add dressing.

Candied Pecans
1 pound pecans
4 egg whites
4 tsp water
2 cups sugar
2 tbs cinnamon
1 tsp salt

Beat egg whites until frothy. Add water and beat for one minute.
Add pecans and stir to coat.
Mix sugar, cinnamon, salt, and mix pecans.
Spray cookie sheet and spread the pecans in one layer.
Bake at 200F for 1 hour stirring occasionally.
