Saute 2 tbsp. olive oil
1 cup pancetta, chopped
2 cups portabello mushrooms
1 Tbsp butter
Saute until pancetta is crisp
Add 2 Tbsp. pine nuts (pre toasted)
And salt and pepper
Then add 2 cups chopped tomatoes and cook down for a few minutes.
Add 1 cup Alfredo sauce. Heat thru.
Add penne. Heat, stirring.
Top with grated Parmesan cheese.
