Chilled Cucumber and Yogurt Soup

Chilled Cucumber & Yogurt Soup

4 Cucumbers, peeled, de-seeded and diced
1 Quart Yogurt
2 Cloves garlic, chopped
1½ tsp kosher salt
1 pinch white pepper
1 Tbs Fresh chopped dill (reserve until the end)

Blend first 5 ingredients till extremely smooth. Fold in fresh dill.

Honey and Lemon Vinaigrette

½ Cup Lemon Juice
¼ Cup Honey
2/3 Cup Oil
Salt and pepper to taste

Blend lemon juice and honey then drizzle in oil slowly till smooth.
