Dishes and Deals: 2014 Rhubarb Festival

Duluth, MN (NNCNOW.com) - The 10th annual Rhubarb Festival takes place from 9 a.m. to 4 p.m. Saturday, June 28.

The Festival supports CHUM in Duluth.

Rhubarb Pavlova will be sold the entire month of June at Zeitgeist as a fundraiser for CHUM.

Rhubarb Pavlova:

Makes eight servings.

4 large egg whites
1/4 teaspoon salt
1 cup sugar
4 teaspoons cornstarch
1/2 teaspoon cream of tartar or 1 teaspoon lemon juice
1 teaspoon vanilla
Stewed rhubarb
whipped cream

Preheat oven to 175 degrees. Cover two baking sheets with parchment paper.

In a mixer, combine egg whites and salt. Beat at a low speed until foamy. In a small bowl, stir the sugar and cornstarch together.

Add the lemon juice and vanilla to the egg whites and increase speed to high, scraping the bowl. Add the sugar/cornstarch mixture and continue beating until very stiff.

Scoop into eight piles on the baking sheet. Gently form cakes.

Bake for five hours until meringues are firm and very light, but not browned.

To serve, top with stewed rhubarb and whipped cream.
