German Apple Cake

German Apple Cake:

1/2 cup (1 stick) butter, at room temperature
3/4 cup sugar
3 large eggs
1 tsp. vanilla
1 cup flour
1 large apple, peeled, cored and cut into 1/4-inch wedges
1 tsp. cinnamon
1/4 cup slivered almonds

Preheat the oven to 375 degrees Fahrenheit. Butter a 9-inch round cake pan. In a large bowl with a hand mixer, cream the butter and 1/2 cup of the sugar until light. Beat in the eggs until mixture is fluffy. Stir in the vanilla and flour, mixing well. Spread batter evenly into the buttered pan. Push apple wedges into the batter to form a circular pattern. Mix the remaining 1/4 cup sugar with the cinnamon and sprinkle over the cake. Sprinkle top with almonds. Bake for 40 minutes or until a wooden pick inserted in the center comes out clean. Cut into wedges and serve.
