KBJR 6 and Range 11 News Today cooking: Tycoons Alehouse

Duluth, MN (NNCNOW.com) - Tycoons' Head Chef joins Adam and Jennifer of KBJR 6 and Range 11 News Today to make the restaurant's Bacon-Porter Brewhouse Beer Jam.

Bacon-Porter Brewhouse Beer Jam “Bacon Marmalade” Ingredients:

Applewood Smoked Bacon, diced: 12 oz

Yellow Onion, diced: 2 each

Porter Beer: 12 oz

Balsamic Vinegar: 1 oz

Brown Sugar: 2 Tblsp

White Pepper, ground: 1 tsp

Kosher Salt: ½ tsp

Sugar, granulated: ½ tsp

Black Pepper, ground: 1/8 tsp

Method:

1. Saute bacon in large sauté pan until crispy

2. Remove bacon from pan and place in Sav-A-Day

3. Add diced onions to sauté pan and season with salt, pepper, and granulated sugar

4. Saute onions until soft, add porter, vinegar, brown sugar and white pepper. Reduce by ½.

5. Once reduced, transfer to 1/6 pan and blend with Burr mixer until a thick chunky marmalade (approx. 10 sec.)

6. Portion into 2 oz. ramakins while hot

7. Cool properly
