Lake Superior Herring Wraps
1-2 tsp peanut oil
4 green onions, chopped
1 lb. fresh caught lake herring, cleaned, de-boned
1 scant T cumin per fillet
1 tsp white pepper per fillet
1 generous splash soy sauce per fillet
1 generous splash rice wine per fillet
soft shell flour tortillas
Sriracha hot sauce (optional)
Heat oil in electric fry pan until shimmering (high heat). Add handful of green onions, fry 20 seconds. Add lake herring fillets. Let fry 20 seconds or so. Flip. Sprinkle spices on one side. Fry 20 seconds or so. Flip. Sprinkle spices on the other side. Add salt. Splash soy sauce on each fillet. Splash rice wine on each fillet, de-glazing spatula. Flip a couple more times as needed, letting it cook for maybe a minute longer, or until fish is flaky and crispy brown.
Serve lake herring with a few more green onions in heated soft shell tortilla as a wrap. Drizzle sriracha hot sauce on fish if you like it hot!
