North Shore Sushi and the Lake Superior Blu-tini

Castle Danger Roll:
1 sheet nori
1 cup cooked and seasoned sushi rice
3 oz smoked lake trout
3 slices fresh avocado
Shredded carrots dressed in rice wine vinegar
Whitefish caviar to garnish

Seasoned Sushi Rice
2 cups sushi rice
3 cups water
½ cup rice wine vinegar
¼ cup sugar
1 teaspoon salt
1 tablespoon vegetable oil

Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed.

Combine remaining ingredients and cook over medium heat until salt and sugar dissolve, cool and stir in cooked sushi rice and spread rice out on baking pan to cool.

Lake Superior BLU-tini:
½ oz blue raspberry vodka
½ oz citron vodka
1/3 oz blue raspberry syrup
Splash of pineapple
Combine ingredients in shaker and shake vigorously, strain and serve up with dry ice if available.
