Balsamic Vinagrette

1 Tablespoon Minced Garlic
1 Tablespoon Minced Shallots
1 Tablespoon Dijon Mustard
1/2 Cup Aged Balsamic Vinegar
1/2 Cup Red Wine Vinegar
3 Cups Extra Virgin Olive Oil
A pinch of Salt
A pinch of Pepper

In a blender mix the Garlic, Shallots, Dijon, and Vinegar. While blender is running, add Olive Oil in a thin stream to emulsify. Season with salt and pepper to taste.
