Lake trout in wasabi sauce

Forbidden Rice Risotto:
1 c. Forbidden rice (cooked)
3/4 c. Chopped carrots, onions, and celery
2 tbs. Olive oil
1/2 c. Chicken stock
1/4 c. Asiago cheese
Cook forbidden black rice as directed on the label (boil one part rice to one and a half cup water). In a pan, saute carrots, onions, and celery in olive oil. Add chicken stock. Add asiago cheese.

Trout:
Sprinkle your fresh Lake Superior trout steak with salt to taste. In a pan, saute trout over medium heat in olive oil. Remove from pan when flaky and cooked through. Plate over bed of the forbidden rice.

Wasabi Sauce:
1 tbs. Yellow onion
2 oz. White wine
1.5 tsp. Cider vinegar
1.5 tbs. Pineapple juice
2 tbs. Lemon juice
2 tbs. Wasabi powder
1 tsp. sugar
1 tbs. Honey
4 oz. Heavy cream
Using the same pan that the fish was cooked in, start the sauce by sauteing the onions in olive oil. Next add the white wine and pineapple juice. Add cider vinegar, sugar, honey, and wasabi powder. Stir well over heat. Finally add the heavy cream and stir. Drizzle the sauce over Lake trout and serve.
