Sweet Potato Muffins

Sweet Potato Muffins

1 1/2 cup milk
1 cup vegetable oil
1 t vanilla
3 eggs
4 cups flour
3/4 heaping cups sugar
½ cup brown sugar
2 T baking powder
2 t salt
1 ½ cups of prepared sweet potato (boiled to soften up before adding to muffins)
1 T cinnamon,
1 t nutmeg
½ t ground cloves
(or to taste)
1 cup of finely chopped marshmallows

Oven at 400 or 375 convection

Beat milk, vanilla, oil and eggs.

Stir in flour, sugars, baking powder, sweet potatoes and marshmallows and salt all at once just until well incorporated

Add spices to batter and mix well

Place in cups add sugar to top of batter.

Bake until golden: about 20 or so minutes. Top with mini marshmallows during the last 3 minutes of baking until golden brown. Remove immediately and allow to cool.
