The first winery to enlist in Travel Green Wisconsin was the White Winter Winery in Iron River. They specialize in meads, which are basically fermented honey and sometimes other fruits. And in northern Wisconsin there are plenty of local ingredients to choose from.
Kim Hamilton, the President White Winter Winery told me, "Our intention has always been to be a winery of northern Wisconsin which means you use northern Wisconsin fruit. It doesn't make sense to us, located in northern Wisconsin, and then buy all your fruit from California"
The honey used is mostly produced in Wisconsin and a lot of the fruits are grown in the Bayfield Peninsula. But the Winery is also conscious about recycling.
"We recycle all of the bottles that we use here for tasting, either through a regular recycling program or we save and rinse all of these so if there are homebrewers, home wine makers that want to come, we just give them our old bottles if they like to use them." said Hamilton.
Even The corks used in their bottling process are certified by the Forest Stewardship Council. But the most sustainable way to get your wine on, is in bags.
Kari Williams, a Winery Assistant said, "The pouch itself, like it says up there, has 90% less waste than glass, 80% reduction of the carbon footprint and unlike glass bottles the way that this pouch is done, you can open it up, take some wine out, couple days later, take more out, it's not going to go bad because the air is not going to get in."
Each pouch holds 2 bottles of wine. And you can bring it to the beach where glass is not allowed. But it also prevents broken glass from polluting our environment.
"The pouch is recyclable and because it isn't glass you can take it with you canoeing, kayaking, backpacking, hiking, biking, and you don't have to worry about it leaving glass shards everywhere." said Williams.
The winery also compost all of its left over fruits after they are pressed and will soon be distilling left over liquor instead of dumping it down the drain!
