Wine and food pairing is common among wine connoisseurs, but now beer connoisseurs have the chance to pair foods at Canal Park Brewing Company.
Badger Colish, the Master Brewer at Canal Park Brewery told me, "We work with four basic things, sensations, taste elements, intensities, and lastly flavor."
But this isn't just about pairing food with beer, its also about bringing the Farm to the Table. Using local foods from the area was not an easy task in the dead of winter.
Josh Anderson, the Executive Chef at Canal Park Brewery explained, "It was extremely difficult, we had to reach out to a lot of people, you know winter time is very hard to find vegetables especially. It was difficult but we locked it down and we found the farmers and they're really happy about being a part of it."
Bringing people closer to their food helps them develop an appreciation for where it comes from and how it got to the plate. But it's also fun for the ones preparing the food.
"It's a lot of fun for us and it gives the kitchen a break from their normal menu and basically gives them a playground." said Colish.
A playground full of local and sustainable foods brought together with fresh local beer.
"The farmers that we're working with, they put in a lot of hard work into what they're doing and they take a lot of pride in it." said Anderson, "So being able to create these dishes, knowing the amount of effort and work and love that was put into getting it to me to be able to put it out and share with people it really exciting."
