Pickwick Smoked Whitefish Piccata

Duluth, MN (NNCNOW.com) Chef Dustin Tomasetti, of Pickwick Restaurant and Pub in Duluth makes Smoked Whitefish Piccata on the KBJR 6 and Range 11 News Today.

Smoked Whitefish Piccata:

2 oz olive oil
1 oz finely minced shallots
1 oz minced garlic
2 oz drained and rinsed capers
2 oz summer squash
Pinch of red pepper flake
¼ cup chicken stock
1/8 cup heavy cream
1 fresh lemon juiced
2 oz butter
Italian parsley
4 oz smoked whitefish
Salt and pepper to taste
Grated Parmesan to taste
8 ounces of cooked pasta (thin noodle)
